Coconut Milk—is lactose free and made from a brew of coconut meat and water. Choose light coconut milk or coconut water, which are lower in calories and fat. Purchase organic coconut milk when possible.
Granny Smith Apples—provide fiber, potassium and antioxidant power in the form of vitamin C, the latter of which helps the body to neutralize harmful free radicals
Baby Kale—is not nearly as bitter or tough as mature kale, but is still loaded with vitamins and nutrients like iron; calcium and vitamins A, C & K.
In a regular blender or vitamix, combine all ingredients until well blended and smooth. Garnish with toasted, unsweetened coconut flakes if you choose.
