Adjust Servings:
1/2 lbs. Turkey Bacon Diced but not to fine
2.5 - 3 lbs. Potatoes Cubed
1 Onion Large - thinly sliced
2 Cloves of Garlic Finely chopped or thinly sliced
2 Pints Clams Chopped or sometimes I use the food processor
8 1/2 Cups Water
1/2 Cups Cornmeal
1 tsp. Kosher Salt
1/2 tbsp. Black Pepper
Garnish Flat-leaf parsley leaves Chopped fine (optional)

I’m always looking for great recipes for my kids and myself that are healthy for us while not piling on the extra weight. I want us all to be able to eat well so we can live a more vibrant and active lifestyle together.  This is one of the best diabetic New England clam chowder recipes that I enjoy making, I have been making this wonderful chowder for quite a few years and love to share it with others.

Add turkey bacon to Dutch oven and saute on medium-high heat until crisp.

Stir in the potatoes, onion, garlic, clams, 8 cups of the water alone with the pepper and salt. Simmer for 30 to 35 minutes, until potatoes are tender.

Whisk cornmeal in small bowl with remaining 1/2 cup of water to thicken and form paste. Stir into chowder. 4. Simmer for 10 to 15 more minutes before serving.

Garnish with finely chopped parsley.
