Ingredients

Adjust Servings:
1 1/2 cups Frozen green peas
1 pound Asparagus Trimmed and cut diagonally into 2 1/2-in. pieces (4 cups)
12 ounces Sugar snap peas Trimmed (about 4 cups)
3 tablespoons Shallot Minced
3 tablespoons Extra-virgin olive oil
1 1/2 teaspoons Lemon rind Grated
2 tablespoons Lemon juice Fresh
1 tablespoon Dijon mustard
3/4 teaspoon Kosher Salt
1/2 teaspoon Black Pepper Freshly ground
4 ounces Pea tendrils Or use pea shoots, or watercress (about 5 cups)
1 cup Flat-leaf parsley leaves Loosely packed
1/2 cup Fresh mint leaves Torn
1 Avocado Firm, ripe & cubed

    This gorgeous salad is chock-full of lovely green ingredients, with textures ranging from creamy to crunchy.  You may want to make the zippy lemon dressing and blanch, drain, and chill the peas and asparagus up to a couple of days ahead of serving, but combine all the ingredients just shortly before preparing to serve to preserve the crunch of the greens and the color of the avocado.

    Delicate pea tendrils, shoots or sprouts would be fantastic here, but watercress also makes a tasty peppery substitute. You might be tempted to add just one herb, we encourage  you to use both: The the mint contributes deep herbal goodness and the parsley adds a burst of freshness to this great salad.

    Bring a large Dutch oven filled with alkaline ionized water to a boil over high. Add green peas, asparagus, and sugar snap peas; boil until crisp-tender, about 3 minutes. Drain and rinse well with cold water; drain well.

    Regular water if ionized is not available.

    Whisk together shallots, oil, rind, juice, mustard, salt, and pepper in a large bowl.

    Add blanched vegetables; toss well to coat. Add pea tendrils, parsley leaves, mint leaves, and cubed avocado; toss gently to combine.
